Never had this happened. How many mods do you have installed?

Do you log off your solo game or just quit?
Logging off creates a save at that point.
Also never had this happen.

Did you log off near you cart (ie in render range) and saw it disappeared when you log on ?

Otherwise it could just have been destroyed by hostiles mobs when you were in the vicinity ? But the remains (all mats and cargo) should be here.
